A green-hued mayo made with fresh spinach and garlic makes these grilled cheese sandwiches extra special. Also try using sharp, peppery arugula in place of the spinach.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 10 Minutes
Ingredients

2 cups fresh baby spinach, divided
1/4 cup mayonnasie
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon McCormick Black Pepper, Ground
8 - 1/2 inch slices sourdough bread
2 tablespoons olive oil
1/2 of (5.2 oz.) Herb & Garlic Spread, softened
1 small zucchini, thinly sliced lengthwise
1 medium tomato, sliced

Directions
Step 1  Step 1:
In a blender or food processor, combine 1 cup spinach, mayonnaise, garlic, salt and pepper. Cover and blend or process until smooth. Set aside.
 
Step 2  Step 2:
Brush one side of bread slices with oil; place, oiled-sides down, on waxed paper. Spread four of the bread slices with cheese; layer with zucchini, tomato and the remaining 1 cup spinach. Spread the remaining four bread slices with some of the mayonnaise mixture; reserve the remaining mixture for serving. Place bread slices, spread-sides down, on top of vegetables.
 
Step 3  Step 3:
In an extra-large skillet, cook sandwiches over medium-high heat for 6 to 8 minutes or until bread is toasted, turning once. Pass the remaining mayonnaise mixture.
